Chiappetta has more than two decades of hospitality experience in the Den- ver area, opening Pearl Wine Co. in the South Pearl neighborhood in 2015 and Pearl Market & Wine and Carmella’s in North Central Park in 2024. The market and res- taurant will take inspiration from Pearl Market, with an emphasis on fresh, quality ingredients and products. “Westerly values long-term stewardship and thoughtful design, and that matters deeply to me as an operator,” Chiappetta said. “I believe the best neigh- borhood markets and restaurants grow alongside the community they serve. Our goal is to create something that feels rooted from day one – a market you trust, a restaurant you frequent, and a space that becomes part of every- day life at Westerly.” The market and restaurant will occupy approximately 6,400 square feet within a 10,000-sf building in the heart of Westerly. The remaining space in the build- ing will be home to SLC’s Colora- do-based homebuilding division, SLC Homes, and land develop- ment teams. DTJ Design is serv- ing as architect for the project, and SLC will construct the building. Groundbreaking is expected in early summer 2026. The concept will blend pre- pared foods, grab-and-go meals, house-made provisions, specialty grocery items and a curated wine and beer selection into a welcom- ing, everyday space, serving the Westerly and broader Erie com- munities. Inspired by Carmella’s, the Westerly restaurant will fea- ture an approachable menu with thoughtful sourcing and made- from-scratch cooking. “Our vision for Westerly has always included spaces that fos- ter connection and neighborly interactions,” said SLC President and Chief Operating Officer Brian Sewell. “Dustin’s vision aligns perfectly with ours, creating a gathering place that brings peo- ple together while adding a new level of everyday convenience for homeowners and the broader Erie community. We look forward to seeing this become a go-to spot for wholesome food and meals and carefully sourced wines, where countless memories will be made.” Upon completion, Westerly will feature approximately 3,100 homes, set in a traditional neighborhood framework, from homebuilders DRB Homes, McStain Neighborhoods and SLC Homes. Development plans also include more than 290 acres allotted for parks, trails and open space. The community features a central wellness-focused amenity center with a resort-style pool, a 17-seat hot tub, and fire pits, as well as more than 6,100 sf of indoor space with a fitness studio, remote workspaces and a com- munity room. The southern por- tion, which comprises 400 acres, welcomed its first residents in 2023. Also in 2023, SLC purchased a 391-acre land parcel to the north from the Colorado State Land Board to expand the develop- ment. The northern portion will feature more than 50 acres of parks and open space, more than 7 miles of trails connecting to the existing community, a second amenity center, and up to 150,000 sf of commercial space within a Town Center.
